Today was a great Saturday!

I finally joined a gym. I have heard a lot about Healthworks in the blog world. Wow, that is a cool gym!

Although, I must say, I have been interviewed less at job interviews! They want to know exactly why I want to join the gym and what I intend to do with my membership. Needless to say, I am psyched to go to my first class tomorrow! The past few months have consisted of me doing yoga in my apartment. I am glad to get back in the game.


Dinner tonight was solo because my husband is at a volleyball tournement. I always enjoy the challenge of cooking for myself because so many of my patients say that their biggest challenge in eating healthy is cooking for one person. I think that the freezer can be your best friend, especially for meats. I just thawed the meat in some cold water for about 30 minutes and then the rest of the way in the fridge. It was like new again.

I simply dredged the pork chop in a beaten egg and dipped it in flax seed and bread crumbs. Then I baked it at 425 degrees for about 15 minutes. It was perfectly done!

The carrots were roasted for about 30 minutes and then I added some feta cheese. I absolutely loved the flavor combination! Usually roasted carrots kind of make me gaggy after a few bites but these were delectable. I was also going to cook up some couscous but decided against it after I had a snack attack before dinner.

Tonight will either consist of hitting my reading pile or going out with some volleyball guys. What will I choose?
