Tonight I followed through with the plan and made us a spinach/broccoli and sun-dried tomato frittata. I am one of those people that thinks the perfect Friday night is being at home and cooking an easy but satisfying meal.

I looked at this recipe merely for reference. I used:

  • One small onion
  • ~3 cups raw spinach
  • ~1/2 cup frozen broccoli, cooked
  • 8 eggs
  • 1/2 cup Parmesan cheese
  • 1 cup mozzarella cheese
  • ~2 Tbsp sun-dried tomatoes

Also, the slice of bread is some amazing homemade beer bread that my husband made. Honestly, it is one of the best things I have ever had. I will do a separate blog post about it sometime.

Yeah, that whole loaf was killed tonight due to two rather hungry gentlemen and their whiskey.
